100g icing sugar
1 tbsp hot water
- Put the icing sugar in a bowl
- Add a little bit of water and then stir. Continue until a smooth paste forms
- Spoon over biscuits to decorate or put into piping bag and drizzle over biscuits
- Then add sweets, chocolate drops, raisins, liquorice to decorate
Variations:
- Chocolate icing: Replace 100g of icing sugar with 75g of icing sugar and 25 g of cocoa.
- Coloured icing: Add a few drops of food colouring and stir in until you get the desired colour.
- Orange flavour icing: Add a tbsp of fresh orange juice instead of water.

150g butter
250g icing sugar
1 tsp vanilla extract
2 tbsp hot water
- Beat together the butter and sugar with an electric beater
- Add the vanilla and water and beat until smooth
Variations:
- For chocolate icing substitute the vanilla extract for 2 tbsp of cocoa powder.
- Add a few drops of food colouring to change the colour. Just remember you may have to add a little extra icing sugar to get the right consistency.

This cream cheese icing is perfect for a banana cake:
1 ½ cups icing sugar
125g cream cheese
30g butter
1 tsp grated lemon rind
- Beat all the ingredients until smooth
- Spread over cake and then sprinkle with cinnamon
